Let me just say: delicious! Don’t be intimidated! I baked it just like a butternut squash – cut open, deseeded, splashed with olive oil and salt and pepper and placed flesh side down on a oiled baking sheet. 350 maybe for 25 minutes. Really easy to scoop out and eat right away or to refrigerate. I added a little butter and parmesan cheese. SO GOOD.
