I have discovered that there are so many ways you can use a big box of baby spinach – it’s a great vegetable to have on hand. I first bought it to add lots of raw fiber to my salads, but soon discovered that there are lots of ways to work it into other meals too.
Throw handfuls into an omelet, quickly steam for an easy side dish, or drop into soups. Baby spinach is ready to eat : no cleaning necessary!
To steam, just add three tablespoons water into a frying pan, heat over medium heat then add spinach. It will wilt in a few minutes. Enjoy all that green goodness!
