Have you ever made a Frittata? Sound exotic and complicated? It’s not! I made two the other day for a morning tea party. They are great for parties because they are easy to make and feed many people. Plus you can make several different kinds. I made one with spinach (see my previous blog about spinach) and feta cheese, the other with brussel sprouts, Parmesan cheese and caramelized onions.
Start with 6 eggs broken into a large bowl. Add any veggie and cheeses you like. Vegetables need to be cooked first. Mix all the ingredients together. Heat a couple of tablespoons of olive oil in a 10 inch, oven proof pan. When hot, add egg mixture and cook about 5-7 minutes over medium heat. Do not stir. The top will still be runny, but the bottom set. Then put the pan under the broiler for 2-5 minutes. Check to see that it is not browning too much after the first minute. It cooks fast! Make sure to use a hot mitt when taking out of the oven. Let cook 5 minutes and then eat!
