This is a great summer recipe. Perfect for picnics or dinners al fresco with friends. And as a bonus – it’s kid friendly! No mayo so you don’t have to worry about it sitting outside too long either. I didn’t have celery when I made it – but I will add it next time for a bit of crunch.
Start with 6-7 medium potatoes – any kind you like. I used yellow ones from the farmer’s market, but red potatoes would be good too. Chop up a handful of parsley, removing stems as you go. Dice 2 or 3 stalks of celery. You can use any store bought or homemade vinaigrette recipe. Here is mine : olive oil, red wine vinegar, juice of one lemon, salt, pepper and Dijon mustard. Mix and toss with salad.
Place all potatoes in a pot of water. Bring to a boil and simmer until you can stick a fork through the potatoes with just a bit of resistance. Drain and run cold water over. When cooled – cut into 1 inch cubes. Put potatoes, celery and parsley in a large bowl. Pour in vinaigrette and mix. Enjoy!
