I’m in the mood for chili today! Here’s a recipe that you can easily prepare with items in your pantry. You can cook it on low heat on the stove top, or throw everything in the crock pot.
Saute a diced onion in some vegetable oil over low heat. Add a few minced garlic cloves, and saute quickly, making sure the garlic doesn’t burn. Then add up some chopped vegetables (whatever you have on hand) :: I used orange bell pepper. Cook until it’s softened. Then add a pound of chicken breast that’s been cut into small pieces. Make sure they are browned through. I add chili powder, cumin, ground cloves, and ground nutmeg at this point. It’s a great combination. Then a large can of diced tomatoes and a couple of cans of beans. (I used dark red kidney beans, but you can use white beans or black beans, even garbazo beans work fine.) Simmer on low heat (or transfer to a crock pot) and you’ll be rewarded with a hearty dinner!
