My kids will not eat raw cauliflower florets, but they do gobble it up in this form — so I thought I’d share an easy way to prepare this.
Preheat oven to 400 degrees. Cut all the green leafy stuff off the head of cauliflower and cut the rest into small bite-sized pieces. Spread onto a sheet pan lined with parchment paper. Drizzle olive oil and salt/pepper over the pan, and toss to coat.
These can cook for 20-25 minutes until they start to caramelize and turn brown.
