It’s that time of year again – leaves are falling, wind is rushing and pumpkin seeds are being roasted! My kids made me go buy pumpkins yesterday so we could roast and snack on the seeds! We will carve them closer to Halloween. Very simple thing here. All I did was to scoop out seeds from pumpkin. Rinse under water and pull off all the orange pumpkin stuff. Then spread out on a tea towel to dry for 30 minutes. Then heat oven to 300 – spread the seeds on a clean cookie sheet. Melt 1 tbs of butter and pour over. Add salt, mix and spread on cookie sheet. Place in oven and cook. Check every 5 minutes or so till done. Should be nicely browned but not burned – enjoy!
