A while back, we ran a post about an easy way to prepare sweet potatoes. Let’s not forget the other types of potatoes. I like to add a bit of garlic powder the last 10 minutes of cooking.
Same drill: dice the potatoes into bite-sized potatoes (I leave the skin on), then spread into one or two baking sheets, lined with foil or parchment paper for easy cleanup. Drizzle olive oil and salt/pepper and toss to coat. High heat — 400-425 degrees — for 20-30 minutes. Open the oven halfway through the cooking time and toss them around a bit.
