A quick how-to for one of our favorite winter side dishes. Peel a half-dozen sweet potatoes, good for 4-6 servings. Cut them into a generous dice. Get that oven cranked to 425 degrees. Spread the sweet potato chunks into a single layer on a sheet pan — you may need two sheet pans.
Drizzle with olive oil and salt/pepper. Then toss everything together to coat. Stick them in the oven for 15 minutes, then toss them around for even cooking and put them back in for another 10 or so. You’ll know they are ready when they are starting to carmelize on the outside and are fork-tender. Enjoy!
