This vinaigrette is a twist on my usual. I usually want either a lemon vinaigrette or a vinegar based one – but I never buy salad dressing. It is so quick, easy and cheap to make your own! This vinaigrette has :: olive oil, red wine vinegar, lemon juice, salt, pepper, a bit of Dijon mustard and the secret ingredients – a pinch of oregano and about 15 drops of fish sauce. Pour everything into a jar, and make the dressing as rich or lean as you like in terms of how much oil you use. Then put the lid on the jar and shake well. Enjoy with a green salad or try on my quinoa salad. Also good as a marinade for fish or chicken.
