This idea was inspired by leftover ham, but I think it would work for turkey or chicken as well.
Start with dicing an onion, mincing some garlic, and chopping a few carrots. Saute that in olive oil until the onions are translucent.
Then add a few cups of stock or broth — I had chicken stock on hand. I cut my ham into small pieces and added it in.
I served it with jasmine rice. Some of us in our family ate it as soup and the rest of us used it as a generous topping for our rice. Either way, we were all happy!
